These sweet apple muffins are the perfect pick me up on a cold morning. Try them with different flavorful, baking apples.
INGREDIENTS
Muffin
- 1 1/2 cup flour
- 2 tsp baking powder
- 1/2 tsp ground nutmeg
- 1/2 cup sugar
- 1/2 cup shortening
- 1 egg
- 1/3 cup milk
- 1 1/2 cup peeled and shredded apples (use a cheese grater)
Topping
- 1/4 cup butter
- 1/2 cup sugar
- 1 tsp cinnamon
DIRECTIONS
- Pre-heat oven to 400 degrees
- Line muffin tins
- Mix flour, baking powder and nutmeg – set aside
- In a separate bowl, cream together sugar and shortening
- Once creamy, add egg. Mix well.
- Add milk alternating with dry ingredients. Blend until smooth.
- Stir in shredded apples
- Fill each cup to 2/3 full.
- Bake for 20-25 mins
- Remove from tin and cool for 10 mins.
- Make topping – melt butter.
- In separate bowl mix together cinnamon and sugar.
- Dip each muffin in the melted butter then in the cinnamon mixture.
- Serve warm or cold.
