For a fresh new spin on slaw, try this Bok Choy Slaw recipe from “Clean and Delicious”
INGREDIENTS
- 1 clove crushed garlic
- 2 tbsp. rice wine vinegar
- 2 tsp. sesame oil
- 1 tsp. honey
- 1 tsp. dijon mustard
- A pinch of kosher sea salt
- 3 cups bok choy, thinly sliced
- 1 carrot, shredded
- 1 scallion, thinly sliced
DIRECTIONS
In a small bowl combine garlic, rice wine vinegar, sesame oil, honey, mustard, and sea salt. Whisk together and set aside. In a large bowl combine, bok choy, carrot and scallion. Drizzle the dressing over the salad, toss and enjoy. Serves 2-4.
